Vanilla Cake with Strawberry Filling

Does it even look like a cake??
Whatever.
Sometimes things don't turn out as planned, particularly when attempting a gluten & dairy-free cake without refined sugars, eggs OR almond flour.
WHAT???! (I know, sigh.)
People, I attempted the impossible & although it may not look like a traditional cake, let me tell you, it was DEEEELICIOUS!
At first I wasn't gonna post this because...well look at it .
As you can imagine, 2am is NOT a good time to redo a cake. I had to make do.
I feared it would be complete mush & felt slight palpitations as my son cut into it, but it was SOOOO moist and yummy!
So for all of you with food restrictions, this is my gift to you!!

Cake recipe: Detoxinista's coconut flour cake. Tastes like vanilla cake! Modifications: swapped tigernut flour 1:1 for almond flour & 1/4 cup carbonated water per egg. Next time I make this, I would cut back on the amount of carbonated water & see if it holds together better. I would also triple the recipe to make the layers bigger. I doubled the recipe here.
Strawberry filling: The Cookie Rookie. Modifications: used arrowroot flour instead of corn starch & honey to taste in lieu of sugar.
Frosting: Detoxinista’s purple sweet potato frosting. Modifications: used white sweet potato & halved the maple syrup. The frosting was still a tad too sweet for us, so I'd probably reduce the maple a bit more in the future, but it was SOOO yummy. Almost like a luscious custard. Would be perfect in a fruit trifle!
So there you have it.
Woohoo!!! A yummy cake that fulfills the most common food sensitivities!!
Because sometimes, a mom's gotta do what a mom's gotta do, right???
