Warm Comforting Breakfast Porridge

Fall has arrived & the time has come to share my porridge recipe with you.

YES. I said PORRIDGE.

OK, OK. Laugh it up!

Who eats porridge??! I DO. And not only is it warm & comforting like the best hug, but it's nutritious & delicious!

All in now, are you chuckles?

Time to pull out those warming Fall spices we all ❤️!

No oatmeal here! It's made with a superfood combo of amaranth & buckwheat groats.

Amaranth is a nutritious, gluten-free grain high in protein, fiber, antioxidants & micronutrients.

Don't be fooled! Buckwheat groats does NOT contain wheat. It's a grain-like seed that’s also gluten-free with a similar impressive nutritional profile.

Warm, Comforting Breakfast Porridge

Ingredients

  • 1 cup amaranth

  • 1 cup buckwheat groats

  • 5 cups filtered water

  • Cinnamon - several dashes, don't be shy! My fave is Ceylon Cinnamon

  • Nutmeg, several dashes (optional)

  • 1 banana, chopped or dates (optional for sweetness)

Instructions

  1. Toss all ingredients in an Instant Pot and cook for 20 mins on multigrain setting.

  2. Release pressure & stir well.

Ladle some into a bowl. Add in your favorite nut milk to create your perfect consistency - thick or thin, it’s up to you!

Top with whatever your heart desires!

I personally add 2 tablespoons chia seeds, MCT oil, pecans or almonds, & blackstrap molasses to sweeten.

A wonderful Fall recipe option is to add pumpkin instead of banana & season with pumpkin pie spice! Feel free to swap out fruits seasonally! I've made it with various combos of cherries, strawberries, apples bananas with cardamom spice. All have been delicious!

Feel free to make a larger batch as it holds up well in the fridge for several days and is quick to heat up on busy mornings.

Just make sure it's not too hot....not too cold....but juuuuust right!
