Not to brag, but I've been CRUSHING IT with smoothie bowls the last few weeks!  

Ohhhhh. Yeah. 

Keeps getting better & better!  

Variety is key to a strong & healthy microbiome, so I've been switching it up daily.

Here's another scrumptious creation that's on the tropical side with pineapple, banana & macadamia nuts.  Totally not just for breakfast, but an delicious summertime treat any time of day!

Superfood-packed with:

  • Collagen for healthy bones, joints, skin, & nails (vegans sub with protein powder of choice!)

  • a healthy serving of GREENS

  • MCT oil to power up the brain & mitochondria

  • Macadamia nuts for added healthy fats & irresistible crunch

  • Phytonutrient & antioxidant rich pineapple, banana, blueberries, dates

  • Healthy dash of anti-inflammatory Ceylon cinnamon

Scrumptious Green Smoothie Bowl

Serves 1

Ingredients

  • 1/2 frozen, over-ripe banana, sliced

  • 1 tablespoon MCT oil

  • Dash of cinnamon (recommend Ceylon Cinnamon)

  • 1 serving - protein powder of choice (or 20 grams collagen powder)

  • pinch of salt

  • 3/4 cup frozen pineapple

  • 1 cup spinach or kale (I used frozen spinach leaves here)

  • ~1/4 cup nut milk of choice (just enough to blend, but not too much where it turns into a smoothie)

  • 1-2 dates (optional, if your banana is not very sweet; soften in hot water for 5-10 minutes before blending if your dates are on the harder side)

Topping options:

I used frozen blueberries & macadamia nuts here!  YUM

Other options:

nuts (pecans, almonds, cashews, pistachios)

sunflower or pumpkin seeds

coconut flakes

granola

fresh or dried fruit

cacao nibs

nut butter drizzle

Instructions

  1. Place all ingredients in a blender or food processor & blend until mixed. Add just enough nut milk to blend as you want this to be a thicker consistency - like soft serve.

  2. Place in a bowl & add nutrient dense toppings of choice.

Tips I've learned:

  • When making one serving, I found my blender to be too large & it just didn't come out right. I had to add enough liquid to blend & ended up with a smoothie - lol! If you're making a large serving to share, a blender works. For single servings I use our Ninja food processor/blender & it works perfectly.  Bonus - you can eat it right out of the bowl for less clean up!

  • You might have to blend a bit, scrape down the sides, then blend a bit more until all is mixed & you have the right consistency.

The options are truly endless with this, so have fun! I keep banana as my creamy base, & have added in almond butter or other frozen fruit like passion fruit, acai, strawberries.

Always incorporate healthy fats, protein, phytonutrients (veggies/fruit)!
