A delicious & nutritious pumpkin pie smoothie bowl!!

ALMOST too good to be true! I can't believe how YUMMY it turned out - super addictive minus the guilt.

I always feel like I'm #nailingit when I get in a good serving of veggies at breakfast! 💪🏽

On cooler mornings, I've been making my bowls room or fridge temp and it's been perrrfect!

Who says pumpkin pie can't be good for you?! 😉 Bonus - one bowl & no baking required.

Pumpkin Pie Smoothie Bowl

Ingredients

  • 1 large banana, sliced (overripe is best; frozen if going for cold soft-serve consistency)

  • 1/2 cup frozen riced cauliflower

  • 1/2 cup pumpkin puree

  • 1- 2 medjool dates pitted or 1-2 tablespoons maple syrup, to taste

  • 1/3 cup coconut or nut milk (just enough to mix)

  • 1 tablespoon MCT oil

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1 scoop collagen protein or vegan vanilla protein

  • pinch salt

Instructions

  1. Add all ingredients to a high-speed blender or food processor like the Ninja master prep until smooth and creamy.

  2. Pour into a bowl & add tasty toppings of choice like grain-free granola, pecans, walnuts, pumpkin seeds, nut butter, and/or fruit.
