Cauliflower & Butternut Thai Curry

 

O.M.G. What a wower!

This recipe has been on repeat rotation in our home for 10+ years! Now that's a true test!

It has remained one of our kids' favorite dishes since they were babies!

I still remember the first time we made it. At first bite, I did a double-take. Packed with incredible depth of flavor, it was hard to believe that it was SO SIMPLE to prepare!

If you're looking for a quick weeknight recipe or one to impress guests that won't absorb all your time in the kitchen - look no further!

We use frozen butternut & cauli which is a real timesaver. We also prefer fresh rainbow chard to kale - I always toss in extra! It adds such nice texture. Personally I think the kale tastes great the first day, but not so much as reheated leftovers. (Sorry Kale - love you, but not in this dish!)

And forgive me while I geek out, but don't you LOVE LOVE LOVE how nutrient-packed this meal is!!!
