For my kids, that means PANCAKES! ๐Ÿฅž

Who said pancakes had to be sinful? ๐Ÿคท๐Ÿฝโ€โ™€๏ธ

These are not only gluten-free, but grain-free, vegan & void of processed sugars! ๐Ÿ˜ฎ

The secret ingredient? Green Plantain Flour

What a great way to start your day! ๐Ÿ˜‹

I topped ours with pumpkin-spiced skillet apples, fresh berries, toasted walnuts & pure maple syrup. YUM.

For the pumpkin-spiced apples, I heated up about 1-2 tablespoons of ghee in a cast-iron skillet, tossed in two sliced apples along with 1 tablespoon of pumpkin spice seasoning. I then tossed intermittently until apples were cooked through.
