Jennifer Aniston Salad

 

Have you tried this viral Tik Tok salad that Jennifer Aniston reportedly ate every day for 10 years while shooting Friends? 

Can you imagine eating the same salad every day for 10 years?!  Jennifer can't either, I'm sure of it.  Apparently, there's a lot of debate on this salad and its relationship to Aniston, so who knows?

Rumor or not, one look at this recipe and I had to try it.  Easy, hearty and delicious.  Perfect for summer!

I love how it's the perfect balance of plant-based protein, healthy fats, veggies and fresh herbs!  

I've been collecting hearty salad recipes for warm summer months.  The kind you can make ahead, quickly pack up - you know what I mean, right?

The unique thing about this salad is that there's no dressing.  I substituted quinoa for bulgur to make it gluten-free and used goat cheese feta which was quite tasty.  We opted out of the red onion, but have at it if you like.  The fresh mint and parsley is everything!  A super fresh, flavor-packed combo - I love it.   

Ah-hem. Just to be clear - Not an "eat-every-day-for-10 years" kinda love, but definitely a keeper recipe in our home!

Jennifer Aniston Salad

Ingredients:

  • 3 cups cooked quinoa

  • 1 cup cucumber, chopped

  • ½ cup parsley, chopped

  • ½ cup mint, chopped

  • ⅓ cup red onion, chopped

  • ½ cup roasted and salted pistachios, chopped

  • 1 15 ounce can chickpeas, drained and rinsed

  • 2 lemons, juiced (about 5-6 Tablespoons)

  • ¼ cup extra virgin olive oil

  • sea salt, to taste

  • ground pepper, to taste

  • ½ cup crumbled feta cheese

Instructions:

  1. Place all ingredients in a large bowl.

  2. Mix thoroughly to combine.
