Healthy Pancakes with Mango Compote
These pancakes will feel like a "cheat" breakfast, but they're not!
We've used both a combo of millet and amaranth flour and millet and tigernut flour - both come out great!
Millet, amaranth, and tigernut flour are rich in fiber and prebiotics to support gut health, have a low glycemic index, a super impressive nutrient profile, and are loaded with antioxidants. Millet and amaranth are a complete protein containing all 9 essential amino acids. And all three are gluten-free!
I fancied up these cakes with a simple mango compote with no added sugar. You can make this compote with any seasonal fruit - so YUM!
Who says pancakes can't be healthy and delicious?

Healthy Pancakes with Mango Compote
Compote Ingredients:
2 ripe mangoes, diced (or other fruit of your choice)
1 tsp of cinnamon
Dash of lemon or lime juice
1 tbsp coconut oil
Compote Instructions:
Melt coconut oil in a pot over high heat.
Add remaining ingredients and mix to combine.
Stir the mixture often until fruit starts to become mushy.
Reduce heat to medium and stir often until a thick paste forms.
Remove from heat and let cool.
Pancake Ingredients:
1 cup millet flour
½ cup of amaranth or tigernut flour
2 tsp aluminum-free baking powder
½ tsp of cinnamon
½ tsp vanilla extract
a pinch of salt
½ cup coconut milk (or other plant-based milk)
2 tbsp coconut oil
1 banana
¾ cup sparkling water
Pancake Instructions:
Heat griddle over medium heat.
Place all dry ingredients in a large bowl.
Blend coconut milk, coconut oil, and banana in a blender or food processor.
Mix the dry and wet ingredients above. The batter should be thick.
Slowly pour the sparkling water into the batter, while gently folding it in.
Grease griddle with coconut oil and pour 1/4 cup of batter onto the griddle.
When bubbles form on the top of the pancakes, they should be ready to flip.
Cook the other side for 2-3 minutes.
Pile the pancakes on a plate and top with fruit compote and/or other toppings.
