Zesty Italian Cannellini Soup
What a wholesome, delicious soup! 😋
Like a hearty Minestrone, but different.
Chock full of veggies, protein-rich cannelloni beans---sooo good!
Soup is our go-to whenever we're pinched for time and/or ingredients. Use whatever produce you have on hand - soup is incredibly adaptable. Oh yeah! A wonderful broth and seasoning is key!

Zesty Italian Cannellini Soup
Ingredients
1/2 cup cannellini beans, soaked overnight
1 medium onion, diced
2 tsp garlic, minced
1 Tbsp tomato paste
2 tsp Italian seasoning
1 tsp salt
1/4 tsp black pepper
6 cups vegetable broth
1 potato, cubed
2 carrots, sliced
2 celery stalks, sliced
1.5 cups tomatoes, diced
1 cup green beans
1 bay leaf
1 cup spinach, finely chopped
Instructions
Add soaked beans into Instant Pot with 2 cups water.
Put lid on and cook on high pressure for 8 minutes.
Let the pressure release naturally for 10 minutes.
Drain the beans and set aside.
Put Instant Pot in Saute Mode and add avocado oil (or another high smoke point oil).
Add onions and saute until translucent.
Add garlic and saute for 30 seconds.
Add tomato paste, Italian seasoning, salt and pepper and cook for another 30 seconds, stirring frequently to make sure tomato paste doesn’t burn.
Add broth and scrape down pan.
Add the potatoes, carrots, celery, tomatoes, green beans and bay leaf.
Put the lid on and cook for 2 minutes on the manual setting.
Let the pressure release naturally for 10 minutes.
Stir in the spinach and warm through.
Optional: Add noodles if you’d like to make it even heartier! We added green lentil noodles for an added protein boost!
