We subbed cocoa for Navitas Organics cacao powder.

What's the difference between cocoa & cacao? I'm glad you asked! 😉

Both are sourced from cacao beans, but cacao is minimally processed, naturally fermented, roasted at low temperatures & cold-pressed to separate out most of the fat (cacao butter).

Cocoa, on the other hand, is highly processed, roasted at high heat & often has many added chemicals including sugar & sweeteners.

Though they don't taste dramatically different, they are worlds apart in terms of nutritional benefits. Cacao is loaded with minerals, fiber & special antioxidants called flavanols that support brain & heart health. High heat & intensive processing sadly causes cocoa powder to lose nearly all of its awesome nutrients. [womp womp]

👍🏽 Strongly consider swapping out cacao powder or nibs for all recipes that call for cocoa powder or chocolate chips for an added nutritional boost!

Flourless Sweet Potato Brownies

Ingredients

  • 2 medium sweet potatoes

  • 1 1/3 cup almond butter or tahini

  • 1/2 cup maple syrup

  • 1/4 cup cacao powder

  • 1/4 cup cacao nibs

Instructions

  1. Place 1/2 cup of water in your Instant Pot and then add a trivet.

  2. Scrub your sweet potatoes and then pierce with a fork or knife. Place them on the trivet. Secure the lid and cook on the Steam setting for 20 minutes.

  3. Release pressure when finished cooking.

  4. Preheat your oven to 350°F.

  5. Peel the sweet potatoes and mash in a bowl.

  6. In another large bowl, combine the almond butter (or tahini) with the syrup. Stir in the cacao powder and sweet potato. Finally, add in the cacao nibs.

  7. Grease an 8x8 baking dish with coconut oil. Pour the batter into the pan and spread evenly.

  8. Place in the oven and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  9. Let the brownies cool in the dish for 20 minutes, then cut into squares.
