Pollo Guisado/Carne Guisada

 

Love Mexican food? Well, you'll LOVE this recipe! Pollo Guisado translates to stewed "chicken in gravy."

My kids call it "the best stew ever!" 😆

Simple & delicious! 😋

Traditionally it's made with beef stew meat, but we swapped this for ground chicken.

We top it with cilantro, sliced avocado & serve over rice or quinoa & a big side of veggies or salad. You can also scoop this goodness into tortillas & add your favorite toppings!

This recipe has been on rotation in our home for years!

We modified a My Heart Beets recipe to use ground chicken and arrowroot powder to thicken instead of the potato starch.

Pollo Guisado

Ingredients

  • 1 medium onion, diced

  • 1 tbsp garlic, minced

  • 1 Chili Pepper, optional (We like Thai chili peppers)

  • 1 bay leaf

  • 1 tsp red chili powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp chipotle powder

  • 1/2 tsp oregano

  • 1/4 tsp ground cumin

  • 1 lb ground chicken thigh

  • 1 cup chicken bone broth

  • 1/2 cup tomato sauce

  • 1 tbsp arrowroot powder

Instructions

  1. On the Sauté function of your Instant Pot, sauté onions until soft and translucent.

  2. Add garlic, chili, bay leaf. Cook while stirring for 30 seconds.

  3. Add spices (red chili powder, paprika, salt, pepper, chipotle powder, oregano, and cumin) and cook another 30 seconds.

  4. Add ground chicken and stir to coat. Then add bone broth and tomato sauce.

  5. Put on the lid and cook for 10 minutes on the Meat Setting.

  6. Release the pressure naturally and remove lid.

  7. Add arrowroot powder to the pot and stir well.

  8. Serve over rice/quinoa and veggie of your choice!
