Instant Pot Spanish Paella

 

This was one of those dishes where I was like, "please don't talk to me while I eat!" Trust me, I was 100% mindfully eating & every one of my senses was fully activated. I actually felt sad when my meal was done!

Paella is one of my favorite dishes, but one that we'd never attempted at home until recently when I came across this creative instant pot vegan version by Molly Patrick at Clean Food Dirty Girl.

Vegan paella loaded with veggies? Ummmm yes please.

Admittedly, we did add shrimp to ours for added protein as our alternative was chickpeas and we were honestly chickpea'd out at that point. (Yes, it's a thing.)

FLAVOR-PACKED -- Sooo delicious! Loved the artichokes! And totally adaptable in terms of veggies.

Our mods? We used basmati rice and halved the broth because of it. We also used coconut aminos instead of Worcestershire sauce.
