LOVE this Thai-inspired, vegan, one-pot twist on Tom Yum Soup by Minimalist Baker!! It may not be purely traditional, but talk about a flavor punch!

Perfect for Veganuary & Meatless Monday.

This recipe is foolproof. We skipped the sugar/maple and added more veggies like mixed colored peppers, bok choy & swiss chard. (#Eatarainbow!) I also added baked tempeh, but you can add any protein of choice.

For those of you doing the 30 Plants a Week challenge, this totals 15+ plants in one bowl of YUM!! 😋
