Steamed Sweet Plantains

How many varieties have you tried?

Most of the time when I pick up plantains at the store, the confused cashier is like, "is this a banana?"

I'm always surprised at how many people don't know what plantains are! Boy are they missing out, cause they're soooo delicious!

Although they look similar to bananas, they're NOT bananas. Compared to bananas, they're starchier, have less sugar & can be prepared & eaten in countless different ways - raw (green skin), just ripe (yellow skin), overripe (nearly black skin - the kind you'd think to throw away. )

One of my favorite ways to eat plantains are what you see here - steamed when they are overripe with a nearly black skin. Totally satisfies a sweet tooth! A favorite anytime treat in our home! Perrrfect with a cup of tea!

Nutritional benefits of plantains vary depending on the stage of ripeness, but generally they are:

☑️ Great source of Magnesium - a common deficiency associated with migraines, insomnia, depression, osteoporosis

Steamed Sweet Plantains

Ingredients

  • Nearly black, overripe plantains - soft to the touch; yields to light pressure

Instructions

  1. Cut off ends, then cut plantains in half or thirds depending on how large they are or your preference.

  2. Slit the skin lengthwise 2-3 times.

  3. Fill Instant Pot with 1 cup of water and place insert inside.

  4. Place plantains on insert.

  5. Pressure cook on high for approximately 6 minutes until plantains are cooked through - usually soft and a bright yellow.

  6. Manually release pressure and let it sit for about 5 minutes.

  7. Peel and serve warm. Optional: drizzle with ghee before serving for added melt-in-your-mouth goodness!

Note: No Instant pot? No problem! You can use a traditional pressure cooker or a stovetop double boiler pot to steam till cooked through.
