Purple Sweet Potato Fries
Oooooh la laaa! Look how pretty!
Never underestimate the impact of simple swaps - like right here with this gorg purple sweet potato!
COME ON!! Who doesn't love fries??! Practically NO ONE.
Orange sweet potatoes are rich in beta-carotene which give it its beautiful orange hue. Purple sweet potatoes are richer in anthocyanins which also give it this gorgeous purple hue. See? Different colored veggies/fruits = different health benefits!
Ancanthocyanin acts as a powerful antioxidant & is wonderful for liver, eye health, and blood pressure regulation.
But that's not all! It's loaded with TONS of other antioxidants & disease-fighting phytonutrients! And not to mention FIBER - great for the GUT & keeping your blood sugars stable.
I take eating a rainbow VERY seriously & purple can prove more of a challenge if you don't make a conscious effort.

Purple Sweet Potato Fries
Ingredients
2-3 Purple Sweet Potatoes, cut into fries (enough to fill a baking sheet)
2 tbsp Avocado oil (or other oil that withstand high heat)
1/2 tsp Garlic Powder
Salt/Pepper to taste
Instructions
Pre-heat your oven to 425°F.
Toss the fries in a bowl with the avocado oil and garlic powder.
Arrange the fries on the baking sheet in a single layer.
Bake for 15 minutes, flip the fries and bake for another 10 minutes.
Take them out of the oven and sprinkle with salt/pepper.
