Overnight Baked French Toast Casserole

A total keeper with so many creative ways that you can switch it up! Different spices, different toppings!
I used Happy Campers Gluten Free Cravin' Raisin Bread. Just toasted it a bit before tearing it up into 1 inch pieces. I also topped ours with apples which went perfectly with the crumble topping.
I used just under 1/4 cup organic blackstrap molasses to sweeten & maple syrup for the crumble topping. It was the perfect sweetness - no need for added maple syrup when devouring! Also used walnuts instead of pecans for the crumble as we were out of pecans. Ooh! I also added Lavva Pili Nut Yogurt on top for that extra WOW factor!
We paired this with savory sausage (mine was plant-based from Meatless Farm - YUM!), breakfast potatoes & fresh fruit.
