Sweet & Savory Tomato Salad
When I picked this bright red bush tomato, the kids were oohing & aahing with excitement! They were right. What a beautiful red color! This was a show-stopper right here! We couldn't possibly dice it up and cook it.
It just felt wrong.
Instead, we dressed it up a bit & made this delicious salad, perfect for hot summer days, though we honestly could have devoured it plain! The kids did as I sliced away.
I'm always amazed at how much sweeter and juicer fruits & veggies are that are grown organically at home & picked at their prime. I totally see why tomatoes are classified as a fruit!
The capers, fresh basil & vinaigrette paired beautifully with the luscious tomato! With a few simple ingredients, this was a flavor explosion for all our senses!
Sweet & Savory Tomato Salad
Italian Vinaigrette
Ingredients:
3/4 cup extra-virgin olive or avocado oil
3 tablespoons red wine vinegar
1/2 teaspoon Dijon mustard
1 cloves garlic, minced
1 tablespoon parsley (dried)
1 teaspoon oregano (dried)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions:
Add all ingredients to a jar or bottle with a tight-fitting lid. Shake well until combined. Alternatively, blend in a blender to emulsify
Tomato Salad
Ingredients:
4-5 medium tomatoes, sliced
2 tablespoons drained capers
4 sprigs fresh basil, leaves only, torn
Instructions:
Place tomatoes on a platter.
Top with capers.
Drizzle Italian vinaigrette dressing over tomatoes.
Garnish with torn basil leaves.
Enjoy fresh!
