Nothing says summer like popsicles! Ahhhh, cool and refreshing on those hot summer days!

And who says they're just for kids?!

This one is loaded with wholesome goodness!

COCONUT MILK - rich in healthy fats in the form of medium-chain triglycerides (MCTs) which boosts energy, promotes brain health, weight loss, replenishes electrolytes, and prevents heart disease.

HONEY - especially raw, local honey which is incredible for immune health, particularly those that suffer from allergies, asthma or other immune-related issues.

STRAWBERRY - super high in antioxidants, phytochemicals, & fiber. Another superfood for your brain!

BANANA - rich in multiple essential nutrients like potassium, magnesium, and fiber. A great source of tryptophan, an amino acid used to make your "happy hormone" serotonin. This might explain my *cough​* "minor" addiction to bananas.

I used a frozen overripe banana & frozen strawberries for this recipe, and it came out great!

Confession: We always have a stash of overripe frozen bananas in our freezer for recipes like this one!

Ingredients

For 6 servings

  • 1 can coconut milk

  • 2 cups strawberry, diced

  • 1 banana, sliced

  • 3 tablespoons honey

Preparation

  1. Place the coconut milk, strawberries, banana, and honey in a blender and blend until the mixture is smooth.

  2. Pour the coconut mixture into popsicle molds filled almost to the brim.

  3. Freeze the popsicles for at least 4 hours.

  4. Unmold the popsicles.

  5. Enjoy!
