A go-to favorite in our house for years. Our family & friends LOVE the "5-Minute Vegan Cashew Queso" by Minimalist Baker!

If you've never had nutritional yeast before, you’re in for a treat! It has a unique nutty, cheesy, savory flavor that’s all its own. We keep some in a shaker and use it as a topping for a variety of dishes. It also works great as a thickener for soups and sauces.

Health benefits of nutritional yeast:

✅ High in protein - considered a complete protein as it contains 9 of the essential amino acids that our body can’t produce.

✅ High in vitamins, especially B vitamins including B12.

✅ Rich in trace minerals including iron, zinc, selenium, molybdenum, and manganese.

Feel free to play around with the recipe! Add in chopped tomatoes, salsa, or spicy jalapenos!

Some tips:

✅ Consider replacing water with veg, chicken, or bone broth for a richer flavor and added nutrients.

✅ If looking for a nut-free option, I hear you can replace cashews with raw, shelled sunflower seeds, but I have yet to try this.

✅ The recipe tastes best if you can soak the cashews overnight.

5-Minute Vegan Cashew Queso

Ingredients:

  • 1 cup Cashews, soaked overnight and drained, if possible

  • 1 clove garlic

  • 2 Tbsp nutritional yeast

  • 1/4 tsp ground cumin

  • 1/2 to 1 tsp chili powder, depending on your spice tolerance

  • 1/2 tsp salt

  • 1 Tbsp lime juice

  • 1/2 cup diced tomatoes

  • 1/2 cup hot water

Instructions:

  1. Place all of the ingredients except the hot water into a high-speed blender.

  2. Start blending and drizzle in the water until you get your desired consistency. You will probably need to scrap down the sides frequently in the beginning.

  3. Adjust any of the seasonings. Serve with tortilla chips of your choice!
